From grapes harvested in phase with the lunar calendar, this biodynamic wine allows the natural yeasts to determine the character of the wine. Following classic red fermentation, the wine is aged for 8 months in new French oak, with 6 months in the bottle. The result is a well-balanced and full-bodied wine with aromas of dark fruits, vanilla and soft spices. To taste, the wine is still light and fresh with flavours of white pepper, hints of fresh green chilli and padron peppers with a long finish. The subtle fresh spice notes allow for easy pairing with a variety of tapas style dishes, Asian fusion cuisine and with strong cured meats and cheeses. The cork in this bottle is 100% recyclable, made from a sugarcane derivative.
