– Sold OutThe Domaine Foivos 42 combines all the red varieties of the Greek Vineyard together in a bottle of wine; in an experimental vinification of 42 indigenous red varieties: agiorgitiko, fokiano, xinomavro, fileri, negoska, mandilaria, mavrodaphne, vaftra, petrokoritho, moschofilero, Limnio, Limnionas, amongst many other fine and noble varieties from the private vine yards of Domaine Foivos.
De-stemmed without crushing the grapes, gentle maceration, fermentation in steel tanks, aged for 6 to 8 months in oak barrels and filtered before bottling and ageing for 1 further year.
Purple dense red colour with very complex flavours, from of wild sea-violet to wild fruits. On the nose in the first pouring into the glass, there are primary notes of juniper and eucalyptus and a hint of blackberry. As the wine opens up in the glass, the notes develop into blackthorn sloe berries, and dark sour cherries.
On the pallet the wine is light and fresh, with medium acidity and medium tannins. The flavours that develop in the pallet are primary dark berry fruits, hints of dark chocolate and very slight vanilla.
With the gentle complex flavours and notes in this wine, it is best served with delicate prime cuts of meat in sauces, such as fillet of beef, roast duck, roast lamb chops, ox tail stews, turkey with roasted vegetables and light hard and soft cheese.
